Baked bacon and egg cups recipe

Serves: 6
Prep time: 30 minutes
Bake time: 50 minutes


1 package puff pastry
250 grams bacon
50 grams shredded tasty cheese
6 eggs
Salt to taste
Pepper to taste
Chives to taste
Equipment needed: Muffin trays
1. Pre-heat the oven to 200 °C. Lightly grease the muffin tray and cut the pastry squares into quarters. Place one sheet in each muffin pan, pressing gently on the bottom and sides, allowing corners to curl upwards
2. Fry the bacon on medium heat in a small frying pan for 3 to 4 minutes or until cooked. Remove from pan and drain any excess grease
3. Place the bacon rashers in each of the pastry shells, and crack an egg on top of each of them. Sprinkle with cheese, salt and pepper to taste
4. Bake for 25 to 30 minutes or until pastry is golden and filled. Garnish with chives to serve
