A romantic date night pasta recipe that’s sure to impress

In our current circumstances, going out for date night isn’t always an option. But, that doesn’t mean you can’t treat your other half to a special evening! Cooking at home can be incredibly romantic, especially with the right recipe.
 
The good news, this doesn’t have to mean whipping up an elaborate, three-course meal. After all, your date wants to actually spend time with you, and that can be tricky if you’re stuck in the kitchen the whole time!
 
Ready in less than 20 minutes, this ravioli is quick and easy but still brings that extra ‘wow’ factor to date night. Whether you’re cooking for a first date, celebrating an anniversary or simply want to level up your usual weekend takeaway, this date night dish is sure to impress. Don’t forget to light the candles, play some romantic music and serve with red wine for extra brownie points!

Goats cheese and brown butter ravioli recipe

 
Serves: 2
 
Cook time: 15 minutes

Ingredients: 

4 fresh lasagne sheets
100 grams goats cheese
100 grams ricotta cheese
1 teaspoon nutmeg
Flour
½ cup parmesan cheese
½ cup sage leaves, chopped
3 tablespoons butter
Thyme to taste
Salt to taste
Pepper to taste
 
Instructions:
1. Bring a large pot of water to a boil over high heat, adding a pinch of salt
2. Meanwhile, create your ravioli filling by combining ricotta, goats cheese, sage, nutmeg and salt and pepper in a bowl
3. Create your ravioli by lying lasagne sheets down flat on a surface covered in flour. Use a circle pasta cutter to cut out your circles, or use a small glass to guide you. Take half the circles and spoon your goat’s cheese mixture into each one. Dip your finger in water and run it along the edge of the ravioli. Then, take the other half of the lasagne sheets and place one on top of each ravioli to seal
4. Gently put your ravioli in the boiling water and cook for 3 minutes.
5. Melt butter on high heat in a large pan until browned. Toss in the sage leaves and season with salt and pepper.
6. Remove the ravioli from the saucepan and gently place into the frying pan, tossing in the sauce until coated
6. Serve with extra parmesan and thyme, as desired!
