Dorito Tacos

With only 10 minutes prep and 10 minutes cooking time this sensational 20 minute dinner is totally worth it. By crumbing the tortillas with corn chips you add an extra layer of crunch and flavouring. We chose cheese supreme doritos however you can opt for something more plain. The sticky bbq sauce is used as a “glue” to attach the crumbs and creates a delicious smokey flavour once cooked. This can also be replaced with a hot sauce or buffalo sauce. These tacos can be enjoyed with your favourite fillings and any protein of choice such as chicken, fish, tofu, vegetables and more.  

Ingredients 

  • 4 small soft taco shells 
  • ¾ bag doritos of your choice  
  • 6 tablespoons of BBQ sauce or hot buffalo sauce  
  • ½ brown onion 
  • 500g mince (there will be leftover)  
  • 2 tbsp taco seasoning  
  • 1 cup shredded lettuce  
  • ¾ cup shredded cheddar cheese  
  • 4 tsp sour cream  
  • 4 tsp salsa  
  • Coriander (optional)  


Method 

  1. Preheat oven to 180 degrees celsius  
  2. Crush/blend doritoes into a crumb like consistency and spread out on a plate, drizzle bbq sauce on a separate plate 
  3. Dip one side of the tortilla into the bbq and the same side into the dorito crumb  
  4. Hang the dorito tacos on a wire rack creating a 2cm bottom base. Place in the oven and cook for 10 minutes or until chips are crispy/tortilla is hard  
  5. Meanwhile, cook the brown onion, mince and taco seasoning in a pan until mince is cooked and fragrant  
  6. Prepare the tacos with the shells, shredded lettuce, mince, cheese, sour cream, salsa and coriander
